Black cardamom is considered a “warming” spice. It is an important ingredient in combination in any garam masala and is primarily used in savory dishes and pickles, but also works well with dark chocolate and fruit. Black cardamom is much stronger than green cardamom, with a bold, resinous, and smoky flavor. It is irreplaceable in North Indian and South Asian cuisines. Toast and grind the seeds with the pods per each use for the best results.
