Loaves are made by Corissa, who serves as the Environmental Programs Supervisor for the City of Redmond. In 2021, she took a week-long intensive course on Sourdough Artisan Bread. Since then, she has made beautifully, tasty loaves of Artisan Sourdough for her family and friends, and now shares this passion of baking and the science behind Sourdough, by teaching the “Sourdough Bread Starter Class” at Arome.
Sourdough is a naturally leavened bread, which means there’s no commercial yeast in it to help it rise. Instead, it uses a 'starter' – a mixture of fermented flour and water that contains wild yeast and natural bacteria – to cause it to rise. This also produces its tangy flavor and chewy texture.
