Tarragon is a perennial herb native to Europe and Asia that has notes of fennel and star anise. It is well known in French, Armenian and Persian cuisines and is commonly used in the US as a component of tartar sauce. It can be used in recipes as a substitute for fennel seed if you dislike the strong licorice flavor of fennel.
